It is amazing the difference a month makes in the mountains of southwestern Virginia. The snow has melted and the pastures are turning greener with every daffodil that blooms. I had the unique opportunity of touring Cross Creek Farm in Alleghany County, North Carolina where Colette Nester and her family humanely raise farm animals for food. Hopefully, during the adult horse camps, we will be serving mostly local, sustainable foods from the region.
